Better Than Olive Garden Pasta Pomodoro

"I have always loved Olive Garden's Pomodoro. This is what I came up with when I experimented at home. This does not heat up your kitchen and is a light supper dish for those hot summer evenings. If you like spice, add some crushed red pepper flakes to taste. Just don't use anything but the freshest ingredients--you'll end up with something that tastes pasty/chemical/bitter/etc."

  • Heat olive oil over high heat and add garlic; saute for 30 seconds.
  • Add tomatoes, salt, and pepper.
  • Saute for another 30 seconds, stirring constantly.
  • Remove from heat.
  • Add cooked pasta and chopped basil.
  • Toss gently.
  • Turn into serving bowl/dish, add 1/2 grated cheese, and toss again.
  • Serve immediately and pass the last 2 oz. of grated parmesan.

  1. Had this with meow's tortellini and it was terrific. I did add a bit of crushed red pepper and cut back on the olive oil. So fast, so simple, so delicious!
     
  2. I'm a professional baker - but weirdly not an expert cook and I'm not sure what I did wrong but this turned out quite bland for me. My tomatoes wouldnt mix into the pasta and sat on the bottom of the bowl, and I used even more fresh basil than called for and still it was bland. I loved the taste of the fresh pram. cheese. But felt it needed something else.
     
  3. We loved this! Fresh summer tomatoes and basil combined with lots of garlic made this delicious. I also added some red pepper flakes. My daughter thought it was like bruschetta on pasta. Will make again!

I live in Minnesota, and actually like the winter more than summer! (Must have Siberian ancestors!) The main focus of my life is, and always has been, children. I've spent the majority of my life either educating myself about children, having and raising children, or working with children. I presently work in an elementary school with children that have emotional/behavioral difficulties, and have three daughters of my own. I also have four grandsons (one an extra gift that came when my daughter very wisely married his dad) and will become Grandma to the the 5th baby in June. This one a little girl! I can not wait!! I received so much joy being a mother that finding that much joy, and more, in being 'Grandma' has taken me by surprise. They are all the best gifts ever given to me. Whatever free time I have is spent with my nose in a book, surfing the web for new recipes, or with my wonderful friends, both online and "in person".
