  • In a small pan, melt the 1 tablespoon of butter.
  • When the foam subsides, add the onions and cook for 2 or 3 minutes or until they are soft and transparent, but not brown.
  • Scrape into a large bowl and add the meat, egg yolks, capers, salt, pepper and white vinegar.
  • Mix together and moisten with the heavy cream.
  • Then stir in the drained chopped beets. Shape the mixture into 12-14 round patties, about 2-3 inches in diameter. Note: if using the fried eggs, make into four patties.
  • In a heavy large skillet, heat the butter and oil.
  • When the foam subsides, add the patties 3 or 4 at a time and cook over moderately high heat for 5 to 6 minutes on each side or until they are a deep brown.

  1. i was looking for something to use up the extra beets in the house. i used organic pork sausage instead of ground beef, two eggs instead of the egg yolks, 1/2 a chopped onion, and left out the butter and oil because there was enough grease in the sausage to keep it moist. the egg on top really made the dish, my family loved it!

I am lucky enough to be "living the good life". I have the most wonderful husband and two terrific teenage daughters. We reside in Central Pennsylvania where we have the luck of having four full seasons. Between my husband and myself, we have two full time jobs, three businesses and one part time job. We are very busy, but try to take it easy when we can and enjoy the wonderful life we have been blessed with. Future plans include moving to an inherited 45 acre farm in a beautiful valley surrounded by mountains. This will occur if and when our DD's leave the nest. We love to travel and have enjoyed seeing all of North America and a large portion of the United States together. Since discovering Zaar, I have to say my life has become more flavorful! I have learned that it's easier than I thought to have an organized, well-planned and yet creative and fun kitchen! I love the features of Zaar, but especially enjoy the people. I have become addicted to the forums and now love taking photos of the food I prepare. I am officially a Zaar junky!
