Big Cookies

"Another favorite from "Towns, Trails and Special Times.....The Marlboro Country Cookbook". These are not your everyday cookies.....peanut butter, oatmeal, chocolate, dates, nuts..........they are more like an incredibly delicious energy bar! A lot goes in to them, but they are worth the effort. Great to carry on a hiking trip or camping. Very hearty and yummy!"

  1. I was restless this afternoon and in the mood for baking so, encouraged by the reviews, I decided to bake these cookies. The second batch is in the oven, the first one cooling. I was curious if they turned out OK so broke off a piece of one of them and then soon went back to finish it off. They are really tasty, with a glass of milk - just perfect. And no flour! Thank you for this lovely recipe FolkDiva! I will make it again and again.

  2. I didn't have enough peanut butter so I added 1 cp.flour.

  3. Awesome cookies. Eaten right away by my family. All have been surprised that there is no flour! Can be virtually gluten-free if able to find the gluten-free oatmeal. Didn't quite make it in time for ZWT5, but did get it in for two vacations. Thanks so much for posting!!!!

  4. "These are REALLY GOOD" cookies!", said DH, who tends to be pretty understated when he likes something. So the "REALLY" and the tone of voice - and the fact that he never likes cookies with raisins told me right off just how good these are! They're really easy to put together, and I got 38 pretty good sized cookies out of them. Definately a recipe I'll make again. Thanks, FolkDiva! Made for 1-2-3 Hits Tag.

  5. This is like all the popular cookies rolled into one. It's hard to believe that there isn't any flour in this recipe. I used raisins and chopped walnuts, and had to lower the cooking time to 8 minutes (it could just be my oven). These are filling and delicious. Made for ZWT5.

I grew up in rural east Texas and Louisiana before being transplanted to the beautiful state of Kentucky at the age of 17....so for the most part, my 'hard drive' is programmed for rich, southern style food. Recipes for things like mashed potatoes, cream gravy, pot roast, chicken fried steak and chili are burned in to my DNA!! ?I will never deny my love for rich, southern foods and I'm not a fan of stripping away all the fat and flavor in order to lighten up my favorite southern staples, however (fortunately) my culinary horizons expand beyond my roots and I love finding new foods and new ways of cooking that are just as delicious and in many cases much healthier. ?I do receive an incredible amount of joy from feeding others....a trait I definately attribute to my southern roots.
