Big Crock Pot Full of Pinto Beans

"A basic dried bean recipe for the slow cooker. Seasoned with smoked turkey pieces, this is a lower fat recipe with plenty of flavor."

  • 2 lbs dried pinto beans (works for other dried large beans)
  • 12 smoked turkey drumstick (available at supermarkets cut into chunks)
  • 11 cups water, for soaking
  • water (to cover for cooking)
  • 1 -2 tablespoon kosher salt (to taste)
  • 18 teaspoon black pepper
  • 18 teaspoon cayenne (or to taste)

  • Sort and rinse beans with 3 waters (from one container to another 3 times).
  • Place in a 5 to 6 quart crock pot with soaking water overnight (my preference, but it can be cooked without pre-soaking).
  • Note: a 4 quart crock pot will be absolutely full, but I have used a 4 quart pot.
  • Drain soaking water and add water to cover by 1 to 1.5 inches.
  • Add smoked turkey pieces.
  • Cook for 10 hours on low.
  • Add salt and peppers to taste.
  • Note: I have used cumin, thyme, and oregano for seasoning, but basic salt and pepper is very good).
  • Serve with cornbread.

  1. This is a good base recipe, I prefer more herbs and spices for flavor. The turkey was good as a low fat ingredient but I prefer ham or bacon. Thanks Red for a good recipe.

My wife and I live just outside of Atlanta, GA. Two daughters live in town, one with my two grandsons. My son is living in California. I'm a retired environmental manager at a manufacturing facility. My Mom and Dad would have loved this site. Dad was a huge collector of recipes and was in the food industry. Mom was a terrific cook as well. Another influence was a roommate at the Universtiy of Arkansas that was an excellent cook. Today I enjoy barbecuing and grilling year round and cooking in general. My latest adventure is in bread baking. I'm loving it and going to school on it right here on the bread forum. I'm active in a terrific church and also love fly fishing and fly tying.
