- olive oil flavored cooking spray
- 1 onion, diced
- 2 garlic cloves, crushed
- 1 carrot, peeled, grated (squeeze out any juice)
- 2 stalks celery, diced
- 1⁄2 red capsicum, diced (optional, see description)
- 1 (400 g) can lentils, rinsed, drained (we used brown)
- 1 (400 g) can red kidney beans, rinsed, drained
- 1 zucchini, grated (squeeze out any juice)
- 2 eggs
- 1⁄2 cup passata or 1/2 cup pasta sauce
- 1 1⁄2 tablespoons pine nuts (optional, see description) (optional)
- 1⁄4 cup corn kernel (optional, see description) (optional)
- 1⁄2 teaspoon cumin
- 1⁄2 teaspoon cayenne pepper (to taste)
- 1 teaspoon sweet paprika
- 3⁄4 cup wheat germ
directions
- Preheat oven to 200C (400F) and line a 5cup loaf tin with baking paper.
- Spray frypan with olive spray and place over a medium heat.
- Cook onion, garlic, carrot, celery and capsicum until soft. Remove from heat and allow to cool.
- Combine beans and lentils then puree two thirds in a blender.
- Return puree to the whole beans and lentils and fold in all other ingredients.
- If mixture seems wet a little more wheatgerm may be needed.
- Press mixture firmly into loaf tin.
- Bake for 50 minutes or until mixture is firm to touch.
- Serve as you would your usual meatloaf recipe.

I really wanted to like this, but it was very bland and very dry. We had to cover it in ketchup to eat it. I followed the recipe as written, and I think I will make it again with some changes. First, I will add fat-free cottage cheese to give it some moisture. Second, I will add some extra seasoning or maybe some more tomato sauce to add some flavor. Lastly, I will puree the entire bean and lentil mixture since the large chunks gave it an odd texture. I know that this is diet food, but I think it could be tweaked to make it a really good meatless meatloaf. Thank you for posting!

I also enjoy watching sports, listening to music and spending time with family and friends. I like almost all types of music, & would go to more concerts if I had more money. Having been diagnosed with Type 2 diabetes last year I am really focussing on eating more & more unprocessed foods. The irony is that I never really had a sweet tooth & now that I've been told to avoid sugar, suddenly alln things sweet seem so delicious!!! Now that I have more time I plan on cooking more frequently & also trying some more time-consuming recipes.</p>
