Bill Granger's Spiced Roasted Pumpkin

  • Preheat the oven to 220°C.
  • Place pumpkin in a roasting pan and sprinkle with cumin, cayenne pepper, sea salt and freshly ground black pepper.
  • Drizzle with olive oil and toss until the pumpkin is well coated.
  • Bake for 30 minutes, or until the pumpkin is tender and caramelized.

  2. This turned out great -- I used pumpkin, which I peeled and cut into chunks. I am going to make this again, but next time I will add 1/2 tsp chili powder to the spices, for a little extra flavor. The cayenne was hot, but I think more overall flavor is needed.

  4. This smelled so amazing while cooking. Went together easy and fast! I microwaved the butternut squash- that is what we call it in the US- for a few minutes and allowed to cool before peeling with my potato peeler. Makes peeling easier! The seasoning on this was fantastic! Thanks for a delicious and definitely different side for us. Made for Holiday Beverage Tag!
     
  5. Just cut pumpkin in pieces too, Came out TERRIFIC too! Served with low fat beef Koftas (recipe to be submitted)...really did enjoy for today, LOVE Bill Granger recipes...made his way :)
