  • Preheat oven to 180 degrees celcius.
  • Sift flour, salt, sugar, baking powder into bowl.
  • Add banana, milk, butter, egg, vanilla extract.
  • Whisk until well combined.
  • Pour into 2.5 litre baking dish.
  • To make the topping, place brown sugar, suryp, water in small pot.
  • Bring to the boil.
  • Pour mixture careflly over the pudding.
  • Bake 35 minutes.
  • Serve with vanilla ice cream.

  1. Sweet, sticky, yummy, easy to make pudding. Instead of boiling the topping on the stove I added boiled water to the sugar and syrup and microwaved for about 1-2 minutes, just until the sugar had dissolved. Then poured it onto the pudding mix before putting into the oven. Served with cream and icecream. A keeper for our family, thank you for sharing :)

I stumbled across this recipe last night when I had a craving for golden dumplings, but wondering if I could incorporate that flavour into a pudding with a banana and an egg (we have a lot of eggs). Lo behold, out pops this recipe and it did not disappoint. I used golden syrup instead, and it was warm, sticky, just enough banana to pair perfectly with the caramel sauce. Also, so quick and easy. I actually mixed the pudding in the same dish that I baked in to save bowls. Thanks Bill! I would def make again.
     
  3. Definitely different and yummy! Tasted a bit like bread pudding with a nice banana kick. It was simple to put together and turned out perfectly...even though I was skeptical about pouring the boiling hot sugar over the uncooked batter. To echo other reviews, the US oven temp conversion is 350.
     
  4. Very nice, easy to make, even had the under 5's helping me. Followed another reviewers advice and heated topping in the microwave to boiling before pouring over pud. Served with custard and ice cream. Thanks for sharing.

  1. On our side of the world this is called a self saucing pudding. There are many different flavours and is simple to make. The beauty of this recipe is you make the cake batter and put into a baking bowl. You then mix the liquid part as instructed and pour on top of your batter. No need to microwave the liquid then pour on top of the batter. This will affect the way this cooks and the end result. To make it simple boil a jug of water, mix required amount with sugar and syrup and pour on top of the cake mix. Put in the oven to bake. I have often made chocolate self saucing pudding as it is simple and can be made quickly with no fuss
     
  2. This recipe is worth making even just for the smell of it coming from your oven, its GLORIOUS. The banana flavor is a nice touch, we served it with a caramel swirl ice cream and a drizzle of some more (store bought) caramel, because why not! Also 85g is 6 tablespoons of butter!
     
  3. Use 2 bananas and juice from a lime. Especially if your bananas are still firm. Soak slices in juice for a while to soften for easier mashing.
