Bill's Black Bean Soup

"I have fiddled with this recipe and I think it is now a great meal for cold winter nights. You can add your own secrets, you can puree the final product or eat as is. I like a little less liquid and a thick base. Please try and enjoy"

  • Soak dry beans in water overnight. Chop onion, Garlic, Bell Pepper, hot pepper and half the Cilantro and cook in olive oil till tender. Add all Dry spices and stir for a minute or so. Add Water, small Hamhock balance of Cilantro. Bring to a boil and cut heat to simmer. Cover and simmer for 5-6 hours. Uncover and high simmer it till broth is a half inch or so above the beans.Salt and pepper to taste. Serve and enjoy. You can also puree the soup for a different texture. Its up to you.

I am especially interested in baking and coming up with new recipes. I still like learning from others. I like to find a way to to cut calories , carbs and sugar. Being diabetic and liking sweet things presents me with quite a challenge .
