Billy's Best Peppered Pork Loin Chops and Potatoes

"I was tired of the typical oven baked potatoes and meat. I looked all through the recipes for pork loins and potatoes, which mostly used creamed soups or onion soup mixes and came up with this outstanding version. I hope you find it as good as I did."

  • 2 (6 ounce) pork loin chops, 1/2 inch thick. (bone on chops or chicken)
  • 4 -6 medium potatoes (russets work well)
  • 1 (16 ounce) jar spaghetti sauce (your choice)
  • 12 medium onion (chopped)
  • 14 teaspoon stone mill steak pepper seasoning
  • 18 teaspoon red pepper flakes
  • olive oil (for browning)

  • Add a Tsp or two of oil to fry pan, add steak pepper and red pepper flakes, (add as much as you think to make it mild or hot), brown chops until golden.
  • Remove Chops, add more oil if needed. add onions and glaze till clear.
  • Peel and slice potatoes. (leave skins on if you like) and add to a sprayed glass 8x8 dish, spread onions over potatoes.
  • Lay chops on top, add the entire jar of spaghetti sauce covering chops and potatoes. Cover with aluminum foil.
  • Bake at 350 degrees 45mins to 1 hour.
