Birthday Cupcake Jello Shot

- 2⁄3 cup cream soda
- 2⁄3 cup cranberry juice cocktail
- 1 tablespoon heavy cream
- 2 (1/4 ounce) envelopes plain gelatin
- 2⁄3 cup cake-flavored vodka (Pinnacle and Three Olives both make it)
- 3 drops blue food coloring, if desired
- whipped cream, for garnish
- candy sprinkles (to garnish)
directions
- Lightly spray the mold with non-stick spray and wipe excess off with a paper towel. Don't overdo it or the residue will affect the taste of the jello.
- Pour the soda, juice, and cream into a medium saucepan and sprinkle the gelatin on top.
- Allow the gelatin to soak for 2-3 minutes, then begin to heat on low, stirring constantly until gelatin is fully dissolved (about 5 minutes).
- Remove saucepan from heat and add vodka and food coloring (if using).
- Pour into molds and chill for several hours (at least 4) or overnight, until set. Amazon sells a silicone 30-cavity peanut butter cup mold that works well for this.
- Remove from mold, top with whipped cream and sprinkles, and enjoy responsibly!

The most defining trait in my life is that I am a mother to two wonderful boys (Tyler, 20 and Zayden, 9). I live in the little college town of Selinsgrove, Pennsylvania. It is the most wonderful place to live as it's nestled in the Appalachian Mountains and along the beautiful Susquehanna River.
Seeing that we live in Central Pennsylvania, our family is also a bunch of HARDCORE Penn State Nittany Lion fans! We are...PENN STATE! I was lucky enough to be given tickets to see Joe Paterno win his 400th game as the head coach of the football team. I cried like I did when my children were born.
The other love of my life is cooking. I didn't really start trying to cook until I was 20, but believe me I have made up for lost time! I absolutely adore baking and I do it whenever I can. I love making Christmas cookies and I have begun hosting our extended families at our home for Thanksgiving and Easter dinners. So far so good.
