ingredients

2 cups Bisquick baking mix
1 tablespoon sugar
¹⁄₂ cup milk
²⁄₃ cup fruit yogurt
2 eggs

directions

Beat all ingredients with wire whisk or hand beater until well blended. The batter will be thick.
Pour batter onto hot griddle, by spoonfuls, grease if necessary, spread lightly.
Cook until edges are dry. Turn, cook until golden brown.

I used Bisquick Heart Smart, fat-free blueberry yogurt and was out of milk so, being in a pinch, I substituted water and crossed my fingers it would work. The pancakes turned out great and we really enjoyed them. I can't wait to try other flavors of yogurt. ETA: I also used Splenda instead of sugar.
