Black Bean and Barley Burritos

"I made this recipe when I was trying to use up some ingredients and add some extra nutrition to my burritos. The taco seasoning should be added to your own taste."

  • In a large skillet, add beans, tomatoes, barley and taco seasoning, bring to a simmer.
  • Cover and simmer on low heat 5 minutes.
  • Add spinach, stir and simmer another 2 - 3 minutes.
  • Heat tortillas according to package instructions.
  • Serve in tortillas, top with one tb cheese each.
  • You can also top with additional toppings such as lettuce, salsa or sour cream, as desired.

Hi. I am mom to a three year old son, 2 dogs, and a cat! We also have multiple tanks of fish floating around various rooms.... <br>I am trying to get my family eating healthier foods, my dh is a little picky about his food, so its hard sneaking the nutrition in. <br>I started running in July of 2007, that, work, and my son keep me moving all the time!
