  • In lg bowl, combine all ingredients.
  • Let marinate at room temperature for 30 minutes.
  • Add salt and pepper to taste.
  • Serve on a lettuce leaf.

  1. This recipe is great for two reasons. First, it's quick and easy to make. Second, it has a nice blend of a few ingredients which gives it a refreshing taste. I used 3-bean mix instead of black bean mix, and red wine vinegar instead of balsamic vinegar. It's a light salad which I'll be making often. Thanks Inez.

  4. This is very good, as is, but I too added chopped green, red & yellow pepper for color and a little celery. I have some left over and am going to add some cooked pasta for another meal.
     
  5. Great basic recipe. I made it as is the first time, then for the second serving, I added cumin and cilantro, plus used lime juice instead of lemon, and cut back a bit on the vinegar because I prefer lime. I also added chopped green and red peppers. It was even better the next day. Easy and colorful recipe. Ole!

Tweaks

  1. Very easy and tasty! I used cilantro instead of parsley and added one quarter cup each of diced green and red bell peppers for more crunch. I think next time I'll use just one can of black beans, this was just a tad too "beany" for me, but it still tasted great!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
