  • Heat a soup pot over medium heat. Add oil.
  • When oil is hot, add onion. Saute onions 5 minutes.
  • Add broth, tomatoes, black beans and pumpkin puree. Stir to combine ingredients and bring soup to a boil.
  • Reduce heat to medium low and stir in cream, curry, cumin, cayenne and salt, to taste.
  • Simmer 5 minutes, adjust seasonings and serve garnished with chopped chives.

  1. This is a delicious soup with nice warm Indian spices. The pumpkin really adds a creamy texture, but not a distinct pumpkin taste. In order to make it a little more hearty, I added some browned Johnsonville chorizo as chorizot really compliments the black beans and pumpkin well. The soup was just perfect alone -- so this was just my preference. Made for Spring PAC, April, 2013.
