- 1 (15 1/2 ounce) can black beans, rinsed and drained
- 3 eggs
- 3 tablespoons vegetable oil
- 1⁄4 cup cocoa powder
- 1 pinch salt
- 1 teaspoon vanilla extract
- 3⁄4 cup Splenda sugar substitute
directions
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease with cooking spray an 8x8 square baking dish.
- Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, Splenda in a blender; blend until smooth; pour the mixture into the prepared baking dish.
- Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

Wow! Let me first say, of course these do not taste like regular brownies. That said, if you're looking for something yummy that is healthy and/or gluten-free, these are sure a nice variation. Only changes I made were to double the vanilla, use regluar organic sugar and I added 1/4 cup chocolate chips. None of the adults I served these to had any idea there were beans, and all 4 kids literally gobbled them up (including one who doesn't usually like chocolate). Cooked up in right about 30min. I did refrigerate them on the advice of similar recipes and it did make them easier to slice.
