  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 large egg, lightly beaten
  • 1 tablespoon cumin
  • 12 cup plain breadcrumbs
  • salt and pepper

directions

  • Sauté onions and garlic.
  • Pour beans into a bowl. Mash with a potato masher. Mix in onions and garlic.
  • Stir in egg and bread crumbs. Season with cumin, salt and pepper.
  • Form into 4 patties.
  • Heat oil in a pan. Add patties. Fry on both sides until browned.
