Black Bean Everthing!

"This was what I did with some leftover black beans that did not get used last night. It turned out really good. I just made enough for one, but am going to try to post as to use a whole can of black beans--so many possibilities."

directions

  • Combine the sour cream, red pepper powder and garlic salt in a small bowl till well combined.
  • Toss together the the black beans, chives and cheese.
  • Mix the sour cream mixture together with the black bean mixture.
  • I ate this by itself, but I also think it would work as a dip or even as a wrap sammie.

  1. This was pretty good. I have never had cold black beans. I like black beans, but I really didn't care for them cold. I had leftovers which I warmed up the next day. I added chopped green onions to mine which improved on the flavor a little bit. I will be making this again. Thanks for a great recipe kitycara.

  2. I changed this just slightly to use up some leftover ingredients. I had half a can each of kidney beans and hominy so used them in place of the can of black beans. Otherwise followed the recipe. Wrapped it in a flour tortilla for a quick dinner. Thanks!

  3. Very good! I like to add fresh cilantro and onion as well. This also works well with pinto beans!

  4. This was wonderful! I made this with a can of black beans I had in my pantry. I served it over romaine and iceberg for a sort of black bean taco salad effect. I added some salsa and chopped green onions to give it a little more southwestern kick. Was easy and mucho delicioso!!

  5. OH MY These were Good!!! I followed the directions exactly and then warmed a tortilla put some pan fried potatoes and some strips of red pepper and topped it with the black bean mixture. It was absolutely perfect. The sour cream went well with the potatoes and the heat from the cayenne was perfect for our tastes. The red peppers gave it a bit of a crunch. Thanks for a great lunch KIttycara!
