Ingredients Nutrition

  • 2 12 cups shredded Mexican blend cheese
  • 3 scallions, sliced, divided
  • 12 cup cilantro-lime spreadable cheese, like Alouette
  • 1 (15 ounce) can black beans, drained
  • 1 (12 ounce) jar roasted red peppers, drained and diced (about 1 cup)
  • 1 (6 ounce) jar marinated artichoke hearts, drained and diced
  • 2 tablespoons chopped cilantro
  • 6 flour tortillas

Directions

  1. Heat oven to 350 degrees.
  2. Combine 1/2 cup cheese and 2 T. scallions; set aside. Combine remaining cheese and scallions with next 5 ingredients.
  3. Place 3 tortillas on greased baking sheet; spread with mixture, leaving 1/2-inch border. Top with tortillas and cheese mixture. Bake 10 minutes.
