Black bean salad - For weight watching people

ingredients
- 2 cans black beans
- 1 can corn kernel
- 1 1⁄2 cups celery, chopped
- 1 1⁄2 cups red onions, thinly sliced
- salsa
- cilantro
- lime juice
directions
- Rinse and drain beans, and add drained corn.
- (do not warm or cook).
- Add chopped veggies, and chopped cilantro, and just a bit of lime juice(maybe half a Tablespoon).
- Toss with salsa.

It sounds like I'm not the only one who usually makes this with bell pepper instead of celery. It's yummy and very filling for being so low-fat. One thing I add to perk up the flavor even more is a tablespoon (or more) of red wine vinegar--it does something wonderful to the black beans, and makes the leftovers really good.

At first this was a bit bland, but I added a splash of balsamic and red wine vinegar. I also used frozen corn, (Thawed out not cooked). Though I prefer red onion, I did not have any left in the fridge :( so I used 1/2 a white onion. Topped with a dollop of hot salsa....it was delicious! A must to try! Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke)
On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
