  • Combine black beans, oil, vinegar, parsley, and scallions and marinate a minimum of 1 hour.
  • (Overnight is best) Before serving add feta, tomatoes and green peppers.

  1. VERY, VERY good, We love black beans, and like salads like this one. My DH loves Feta cheese. So this salad really filled the bill. I let it marinate for 5 hours. Very good. Thanks for posting the recipe Stacy.
     
  2. Thanks for such a great tasting salad. Our grocery always has fresh black beans in the reduced bin--this is a good recipe to take advantage of extremely cheap beans. Stacylu, how can you say this dish looks gross? I thought it looked beautiful and tasted wonderful! I'm not crazy about parsley, so added a little less. The feta is the perfect finishing touch. So much going for this salad--low carbs, high fiber to boot! Thanks for sharing.
     
  3. I made this only about an hour before dinner so it didn't have time to marinate long, but it was still absolutely delicious. I substituted cilantro for parsley since that's what I had, and used canned tomatoes. Yum! We'll be making this salad again!
     
  4. Delicious! Healthy! Great presentation! What more can you ask for? I used two cans of black beans and a yellow bell pepper in place of the green to add extra color. We served it in pita bread with the last of a garlic white bean spread I had to use up, and boy, was it yummy! We really enjoyed this one. This goes into the permanent file...thanks!
     
  5. This was great! I substituted with 2 cans of white kidney beans and used a bit less feta and it turned out amazing, even better when it marinated for a few hours. DH really enjoyed this! We'll definitely be making this one again! Thank you for posting your recipe!

Tweaks

  1. This was delicious. I added a bit more vinegar as we like it tangy and a bit less olive oil to save calories and fat. I added left over fresh corn cooked the night before. I used one can of black beans and one white bean (what I had on hand). Turned out delicious and healthy!
