Black Bean Soup
"This recipe is my own creation. I was looking for something hearty and that my kids would eat. They don't like dry beans - so I was skeptical at first. They loved it and the first time I made this - there wasn't any left! We had this with homemade breadsticks for a filling meal. This recipe freezes well. I have also taken it to potlucks. It is a crowd pleaser. Yield is approximate."

ingredients
- 1 quart black beans, home-canned
- 2 large carrots, chopped
- 2 celery ribs, chopped
- 2 cups ham, diced
- 1 small onion, chopped
- 1 quart water
- 1 (7/8 ounce) package brown gravy mix
directions
- Combine all ingredients. Let simmer for a couple hours so flavors will blend.
- Enjoy with your favorite bread.

Great! I used soaked dried beans, ham stock (made from holiday ham bone) instead of water and gravy mix, and added salt, garlic, savory, and parsley. -
Am taking your word that this freezes well, 'cause that was a prime reason for my making it! One thing I DO KNOW is that it IS great tasting! I didn't have home-canned beans (& probably never will!)! <p>I live on the Oregon Coast with husband and four boys. I am able to stay at home with them and hold down the fort. I have many cookbooks which I enjoy searching through for our family favorites. I recently started working as a home health care worker for seniors with disabilities (which I absolutely love), I love to quilt, crochet, bake, read, garden, watch the rain (which happens quite frequently here) and play with my kids. <br /><br />I am passionate about canning, canning, canning. I will admit I like admiring all the hard work after the jars are placed on the shelves. hehee I am all for if I can make it myself I will. Yes...I am frugal. I also love to bake. Especially homemade bread. I will continue to do so until arthritis takes over my hands. Then I will use more of the mixer for the kneading part. <br />All recipes I post are ones I've made and are our famiy favorites. <br /><br />I love pretty flowers. These flowers grace our yard every year.
