Black Bean Soup

ingredients
- 2 cups black beans
- 1 ham bone
- 1 stalk celery
- parsley
- 4 tablespoons butter
- 1 onion, sliced thin
- 2 quarts water
- 1⁄4 cup sherry wine
directions
- Soak the beans overnight in water to cover.
- Drain and cover with 2 qts. fresh water.
- Add ham bone.
- Add sliced onion, parsley, and celery to taste.
- Simmer 3 1/2 to 4 hours in a covered pot, until soft.
- Rub the beans and liquid through a sieve.
- Reheat, add butter, pepper and salt to taste.
- Stir in sherry.
