  • Soak the beans overnight in water to cover.
  • Drain and cover with 2 qts. fresh water.
  • Add ham bone.
  • Add sliced onion, parsley, and celery to taste.
  • Simmer 3 1/2 to 4 hours in a covered pot, until soft.
  • Rub the beans and liquid through a sieve.
  • Reheat, add butter, pepper and salt to taste.
  • Stir in sherry.
