  • In a large saucepan, saute celery, onion and garlic in oil until tender. Stir in the remaining ingredients. Heat through.
  • Diabetic Exchanges : 1 1/2 meat 1 starch.

  2. Delicious stuff! I used uncooked rice: added 1,5 litres of chicken broth to the pot after sauteeing the celery, onion and garlic and simmered for 10 minutes, and then proceeded with the recipe. We divided this into 5 generous servings. Very good: will be added to the lunch rotation! Thank you Boomette!

  4. Made this for dinner last night...put it in the crock pot and cooked it on low all day. The house smelt wonderful as it simmered away. Besides cooking in the crock pot, I made one other change. I added a can of pinto beans to the mix as well. My oldest DD said she would not be eating dinner because she is not a fan of black beans however; she came to the table after I had dished up everyones soup saying "It smells good...I guess I will have a bowl". She enjoyed 2 full bowls of this soup. We topped the soup off with a dollop of sour cream. Boomette, thanks for another keeper. I will definitely be making this again and soon.   5. Great recipe! I made mine in the crock pot. I sauted the celery, onion, garlic and oil and then put all ingredients in the crock pot. I put the chicken in raw and left the rice uncooked. Took about 2 hours and was ready. Topped with chedder cheese and will be making this again and again!!

Tweaks

  1. loved it.. i did change a few things..i used 1 lb. of butterball turkey sausage out of the casing in place of the chicken (just because it was on sale), brown rice and did us the cumin...it was great...it said 10 servings..we must be big eatters..there are 5 of us and we were full with no leftovers.
