Black Bean Veggie Burgers

"Costco has a chipotle black bean burger that I love, so I found a basic recipe and tweaked it to meet our tastes. I really enjoy these burgers. They have just enough kick to keep them interesting."

  • In a small bowl, combine the egg, chili powder, cumin and chili sauce.
  • In a food processor, pulse bell pepper, onion, and garlic until finely chopped. If needed, strain to remove excess water.
  • Add beans and egg mixture, pulse until combined. Transfer to a bowl.
  • Work in bread crumbs and parmesan until mixture is sticky and holds together, adding more bread crumbs if needed.
  • Divide into four burgers. Grill or freeze for later use.
  • Heat a skillet on the stove top (medium heat). Coat with cooking spray and cook the burgers about 6-8 minutes per side. You can also bake them in the oven at 375 for about 10 minutes on each side.

  1. I was so excited to read your description, as I have bean trying out bean burger recipes searching for a Costco bean burger copycat! I'm such a fan of the super easy 'n' tasty Costco black bean burgers, but they are so loaded with salt that I wanted to find an alternative recipe that was healthier. This was perfect! I grilled them in my George Foreman and made many thinner patties (instead of four BIG ones - we're talking really big) to get them cooked through. Made them for myself and my mom (who's also a Costco bean burger lover) and she said they were easily as good (if not better) than Costco's and that this was definitely a "five star recipe." Thanks so much!
     
  2. sorry about this..recipe lists hot sauce as an ingredient, but directions say to add chili sauce...which one is it?
     
  3. Love the flavor of these burgers. I did have a problem with them falling apart while cooking and then when I tried them. I mixed these up a couple weeks ago and put them in the freeze and just got around to cooking them today. Maybe they would have held together better if I had cooked them at the time I mixed them up. Anyway, I will make another batch just because the flavor is what I'm looking for and I'll play around with getting them to hold together. Thanks for sharing the recipe.

  1. Hi, did these Italian style. Using tomato sauce and mozzarella instead of chili sauce. The consistency came out just like meatballs. Thanks for the recipe. Cool beans.
