Salsa
- 2 vine-ripe tomatoes, seeded & diced
- 1 bunch cilantro, minced
- 1 jalapeno, seeded & minced
- 1 garlic clove, minced
- 2 tablespoons lime juice
- salt & pepper, to tase

For the Beans
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 small yellow onion, diced
- 1 (16 ounce) can black beans, drained & rinsed
- 1⁄4 cup orange juice
- 1 1⁄2 teaspoons cumin
- salt & pepper, to taste
directions
- Mix salsa ingredients at least six hours in advance.
- Saute onions in olive oil; add garlic just before onions are done.
- Add the remaining ingredients & simmer until the liquid is reduced.
- Serve immediately.
