  • Preheat oven to 375 degrees F, then grease an 11"x7" baking dish.
  • Arrange yams in the prepared baking dish.
  • In a saucepan, whisk together the brown sugar, cornstarch, orange zest, salt, & cinnamon, then stir in the apricot nectar until smooth.
  • Bring almost to a boil, stirring constantly, then reduce heat & simmer 2 minutes, before removing from heat.
  • Add pitted dark sweet cherries & butter, stirring to melt the butter, then pour this cherry mixture over the yams.
  • Bake, uncovered for 30 minutes, then serve & enjoy!
