  • Chop bacon into 1 inch pieces.
  • Add to medium pan and cook until crispy. Do not drain off the grease!
  • Add onion, celery, and garlic to bacon and cook for 5 minutes.
  • Add all of the ingredients from the pan including the bacon grease to crock pot.
  • Add remainder of ingredients to crock pot.
  • Cook on low for 2 hours or on high for 1 hour.
  • Stir and serve on rice.
  • Enjoy.

  1. I let these cook on high in my small slow cooker for hours-maybe even 6 or so. I like them to get thicker. Since I was keeping them meat free I did add some smoked sea salt. Easy recipe, especially using canned bean, convenient and can do any time. I like all the herbs that were added and they have a good flavor without being overwhelming in any way. Good with a variety of meals, could add cumin etc if want more of a Latin flavor or even curry for an Indian inspired flavor etc....We had them with a cornbread recipe I found here on Food. com. with some zucchini stuffed enchiladas. Very good.
