Blackeyed Peas and Cajun Sausage

"Beans and sausage, what could be more Cajun than this? It's hearty and yummy. According to a study of nearly ten thousand Americans, a diet containing at least 300 micrograms of the B vitamin folate (found in beans) reduces the risk of stroke and heart disease."

  1. Very tasty! I did add extra water as you suggested. I also used a fresh andouille instead of a smoked andouille since it was what I had and it tastes delish.

  2. I'm a southern gal and we love our blackeyed peas here. They were delicious and such a wonderful comfort food for us. The only change is made was to add a can of rotel chilies & tomatoes to spice them up a bit.

  3. Oops I forgot the green onions! I made these for DH who was very pleased and said you can make these again. Thanks for the post.
