Blender Tomato Soup

"We really like this soup - not quite the same as my homemade (tomato soup to can) - but a nice quick way to make "real" tomato soup. Nice flavor, and easy to make! ENJOY!"

  1. Quick is my middle name and this soup is that. I used two cans of tomato sauce, garlic powder and dried basil and sprinkled cheese and croutons on top. I think I'll try using canned tomatoes or crushed since it's blended anyway. My boys loved it and it definitely hit the spot! Thanks. It's still missing a little something for me, maybe sour cream, but I will for sure be making this soup again and again so I'll have plenty of chances to tweak it.
     
  2. DH came in from mowing the lawn asking if we could have lunch early because he was hungry. I already had this planned so I threw it together, made grilled cheese sandwiches, and had lunch on the table in 10 minutes. I served this in thick mugs, and we really enjoyed the soup. I did substitute V8 juice for tomato juice and used 2% milk and extra sharp cheddar. I also slightly heated the V8 in the microwave. The taste is quite mild-you could make it more tomatoey by altering the ratio of milk to soup. You can feel the texture of the fresh onion (we liked it) so you could precook onion slightly if you wanted. This would be good with parmesan sprinkled on top and a little basil, too. This rates 5 stars for the ease and speed of preparation. It tastes good, too!
