  • Coat blintzes on both sides with butter.
  • Sprinkle with cinnamon.
  • Place blintzes in buttered 9x13" pan, one inch apart so that blintzes and soufflé can be served.
  • In blender, combine eggs, sour cream, sugar, and vanilla.
  • Pour over blintzes.
  • Bake at 350F 40 minutes, until soufflé puffs up.
