- Coat blintzes on both sides with butter.
- Sprinkle with cinnamon.
- Place blintzes in buttered 9x13" pan, one inch apart so that blintzes and soufflé can be served.
- In blender, combine eggs, sour cream, sugar, and vanilla.
- Pour over blintzes.
- Bake at 350F 40 minutes, until soufflé puffs up.
