Blossom Beignets

ingredients
- 1 egg yolk
- 2 cups water, ice cold
- 1⁄8 teaspoon baking soda
- 1 2⁄3 cups flour
- squash blossoms
directions
- Whip egg yolk and baking soda into the water in a large bowl.
- Sift in the flour and mix well.
- Batter should be thin.
- Dip blossom, twirl to coat well.
- Place in a pan with 2" oil and fry for 1 minute, turn and fry for another minute.
- Place on paper towel to drain.
- Sprinkle with sifted powdered sugar while still draining and hot.
- OR - omit sugar and serve with a small dipping bowl of berry syrup.
