Blue Cheese and Chive Mashed Potatoes

- 2 lbs russet potatoes, peeled and cut into 1 1/2 inch chunks
- 1⁄2 cup blue cheese, crumbled
- 4 tablespoons butter
- 1⁄4 cup fresh chives, snipped
- 1⁄2 teaspoon garlic salt
- 1⁄4 teaspoon black pepper
directions
- Cook the potatoes chunks in boiling water in a medium saucepot until they are fork tender for 15 -20 minutes.
- Drain well, and return to pot.
- Mash potatoes with a masher until smooth.
- Stir in blue cheese, butter, chives, garlic salt, and pepper until thoroughly combined.
- Return the mashed potatoes to stove and cook for a few minutes more until very hot.
