  • Rub potatoes with shortening or oil. Bake in hot oven 400 for 1 hour.
  • Remove from oven; cut a lengthwise slice from top of each potatoe. Scoop out inside of each; mash.
  • Add sour cream, blue cheese, milk, butter salt and pepper to mashed potatoes.
  • Beat with electric beater until fluffy. Spoon mixture lightly into potato shells.
  • Place on baking sheet; return to hot oven for 15 mintues or until heated through.
  • Sprinkle with crumbled bacon.
