- 2 tablespoons honey
- 1 tablespoon sugar
- 1 tablespoon cornstarch or 1 tablespoon arrowroot
- 1 teaspoon ground cinnamon
- 1 cup water
- 2 tablespoons lemon juice
- 3 cups fresh blueberries or 3 cups fresh blackberries
- 1 cup whole wheat pastry flour
- 1 teaspoon baking powder
- 1 tablespoon sugar
- 1⁄2 teaspoon baking soda
- 1⁄2 cup low-fat buttermilk
directions
- Preheat oven to 400 degrees.
- In a large saucepan over medium heat, combine the honey, sugar, cornstarch or arrowroot powder, cinnamon, water and lemon juice. Mix until smooth.
- Add the berries and cook over medium heat for about 10 minutes until thickened.
- Combine the pastry flour, baking powder, sugar and baking soda in a medium bowl. Add in the milk and stir until ingredients are combined.
- Pour the filling into a nonstick casserole dish.
- By tablespoons, drop the biscuit dough on top of the hot fruit. Bake in the oven for about 20 minutes until biscuits are slightly browned.
