Blueberry Banana Happy Face Pancakes

"This recipe is from the Company's Coming Cook for Kids cookbook. I have to double the recipe for my husband and two boys. If there are leftovers, I freeze them and warm them up in the toaster on a morning when we're in a rush."

  • Stir first four ingredients in medium bowl.
  • Make a well in the center.
  • Beat next four ingredients in a small bowl.
  • Add to well.
  • Stir until just moistened.
  • If you are adding the blueberries to the batter, fold them in now.
  • Pour 1/4 cup into non-stick frying pan for each pancake.
  • Cook for about 30 seconds.
  • I you did not add blueberries to batter, arrange blueberries on pancakes in a happy face.
  • Turn pancakes over when edges start to dry and bubbles break on the surface.
  • Cook until golden.

  1. Delicious! These taste like a muffin in pancake form! My DH and 16 month old DD LOVED them - and BONUS - they taste great WITHOUT syrup too :-) Due to an allergy I made these with plain soy milk and it did not in any way compromise the flavor. I had the same problem with the center not getting very done and the outside getting overdone so I just sprayed a little extra cooking spray on my skillet and turned my fire down a little more and problem fixed! The only negative is that this recipe only made 5 medium sized pancakes! Double it if you're cooking for more than just yourself! I am also going to try another user's suggestion of freezing these and heating them up in the toaster. Thanks for a new breakfast regular! UPDATE: Still making these for DD who is 30 months now and when I make them she wants them for breakfast, lunch, and dinner and then is upset when they're gone. Can't feel too bad about only 2 tsp of sugar, no need for syrup, and lots of fruit! My only complaint is that she won't share with me!!!
     
  2. I absolutely love these pancakes. Out of all the pancake recipes, this has to be my favourite. Although I did not quite make them out of the exact recipe, I had altered it a bit. I used whole wheat flour, brown sugar, unsweetened applesauce (in place of the oil), and soy milk. I also added vanilla extract, as well as some oats into this recipe. It was VERY delicious, and I highly recommend!
     
  3. Great pancakes. If you are looking for something different that muffins or dessert to use up that over-ripe banana, give this one a try. I followed the recipe exactly, except for substituting milk made from powdered milk since I ran out of my fresh milk last night. I used 3/4 cup of frozen blueberries, mixing them in frozen to the batter. I do recommend cooking this on a slow medium heat, since they are pretty thick and need time to set up before you can flip them. I made a single recipe and got 9 small pancakes. Good with or without syrup. UPDATE: I've made this a few times now. To make it healthier, I subbed applesauce for the oil, added a little oatmeal and powdered milk (on top of reg milk). You can't go wrong with this basic recipe!
     
  4. Enjoyed these and have some left for the freezer. I made a berry sauce to put on top. I did use white whole wheat flour. I made a double recipe and it made quite a few, but I did make them on the smaller side. Great to have in the freezer to pull our for a quick breakfast. My toddler likes pancakes!

  1. Yummilicious! In my quest to eat healthier, I used 1/2 cup white + 1/2 cup whole wheat flour, skim milk and subbed ff yogurt for the oil. To thin out the batter, I also added another splash (2 Tblsp. ?) of milk. I ended up with 12 good-sized delicous pancakes. I'll be making these often! Thanks for sharing erinn!

  3. I used fat free sour cream instead of the oil and buttermilk for the milk. These were beautiful and really good, my husband said they were the best banana pancakes I've made. Will be making often, thanks!

I work part time for a midwifery clinic and am mommy to three very busy and very hungry boys (ages 1, 9 and 10). My husband plays bass and sings in a christian band called Broken Walls ( www.brokenwalls.com ) so he is on the road alot and i am left to figure out something nutritious, fast and easy for the three of us when he is gone. My husband is an amazing cook and it comes so easy for him- which is a blessing and much appreciated after a day of work! I love recipezaar because it gives me ideas I just would never come up with on my own, and I really appreciate the enthusiasm and helpfulness of the other "chefs". I have been given some very good tips and advice.
