- 1⁄2 cup butter
- 1⁄2 cup granulated sugar
- 1⁄4 teaspoon salt
- 1 teaspoon vanilla
- 2 egg yolks
- 1 1⁄2 cups flour
- 1 teaspoon baking powder
- 1⁄3 cup milk
- 2 egg whites
- 1⁄4 cup granulated sugar
- 1 1⁄2 cups blueberries
- 1 tablespoon flour
- 1 tablespoon sugar
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg, freshly grated
directions
- Preheat oven to 350*.
- Grease and flour a 9” pan.
- In medium bowl, cream butter with 1/2 Cup sugar, add salt, vanilla, egg yolks and beat till fluffy.
- In small bowl, combine 1 ½ Cups flour with baking powder; add to creamy mixture alternately with milk mixing to form a smooth batter. Set aside.
- In medium bowl gently mix berries with 1Tbsp flour, fold into batter and set aside.
- Beat egg whites to soft peaks and gently fold into batter. Pour in prepared pan. Mix remaining sugar, cinnamon and nutmeg; sprinkle over batter.
- Bake 45-50 minutes until cake is done. Serve warm with a scoop of ice cream.
