  • Spray an 11x17" baking pan with non-stick spray.
  • Combine all ingredients.
  • Bake in prepared pan at 350 F for 30-40 minutes. Serve warm or cold.

  1. I thought this was fabulous; I'm a big fan of oatmeal! I used regular eggs instead of egg substitute, but followed the recipe otherwise. Mine was as done as I like baked oatmeal to be in 25 minutes. Next time, I intend to double the blueberries.
     
  2. I loved the sound of this one but unfortunately the taste didn't dazzle me, it seemed a bit gluggy. I used a powdered egg subsitute so not sure whether it should have been a liquid one from the recipe, maybe that may have been my problem. Thanks for posting though, always good to try something new.

I'm a 48 y/o gay Jewish man in the suburbs immediately north of New York City. I'm a general internist, practicing and teaching at a medical college north of NYC. I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
