Blueberry Coffee Cake

"This is an adopted recipe that so many of you have enjoyed and I am so very glad. I have revised the directions to reflect the cooking method that RitaL used....so hopefully it will be much clearer now!!!"

directions

  • Place flour, sugar, baking powder, & salt into a food processor and pulsed to sift and lighten.
  • Then add the room softened butter and pulse.
  • Next add milk & eggs and pulse.
  • Mix in by hand 2 cups of frozen blueberries (which have been dusted with flour).
  • Bake in a 9 inch pan at 350 degrees for 30 to 40 minute.
  • Let cool.

  1. Mine was okay.. turned out dry and not very sweet.. maybe I'll try like other reviewer with melted butter on it..
     
  2. Lovely..Mine did though take forever to cook, probably 20 min. longer. The reason I believe is that I used a loaf pan, a commercial pan from King Arthur and it is very insulated. Thank You Jellyqueen!
     
  3. Lovely moist cake with lots of blueberry flavor. Easy to throw together in the food processor. I omitted the nutmeg as we don't care for it and just sprinkled the 2 Tbs of sugar (I used brown sugar) over the top of the cake before I put it in the oven. The recipe does not say what to do with it or the nutmeg.
     
  4. The 2 step directions was a bit puzzling. Makes it tough for those that don `t really bake. So for those that need more information I place flour, sugar, baking powder, & salt into a food processor and pulsed to sift and lighten. Then added the room softened butter (above not stating if it should be dry ingredient or melted to be liquid) and pulsed, then adding milk & eggs. I mixed in by hand 2 cups of frozen blueberries (which I dusted with flour). Put into a greased tart pan. Sprinkled the top with the 2 tablespoons sugar and 1/4 teaspoon nutmeg and 1/2 teaspoon cinnamon (I added). Directions said to add all dry ingredients together but it didn't seem to make sense to add it to the batter. I baked it for 50 minutes. And it came out BEAUTIFUL! What a lovely cake! I`m rating this on my results which is 5 stars. I`m hoping Audrey adds a little more to the directions.
     
  5. This was wonderful! We ate it this morning with our coffee. It's perfect, moist and not too sweet. DH loves anything with blueberries and he thought this was exceptional! Thank you!!
