  • Use a fork to blend the cottage cheese and egg together. Add the flour, salt, baking powder and sugar; stir to combine.
  • Add milk and stir lightly, then gently stir in the blueberries.
  • Spoon into 10 muffin cups and bake in a preheated 425 degree oven for 15-18 minutes.

  2. Not a big fan of this recipe - consistency ended up more "bread" than "cake". Would have been a nice dinner roll, but not my idea of muffins Also sure how anyone got 10 muffins out of this, I barely got 5 in a standard muffin pan.
     
  3. Ran out of eggs, so I whipped up some chia eggs (1 tbsp flax or chia + 3 tbsp water = 1 egg). It worked out great and loved these muffins due to the lower amount of sugar than most recipes!
     
  4. I made this last night and used diced peaches. It was delicious!!!
     
  5. Light and fluffy ... Loved this recipe! I doubled it and added a bit more cottage cheese ... Because I had it. Very moist and tasty, not too sweet.

Tweaks

  1. I added raisins and walnuts and use almond flour instead
     
  2. I used whole wheat flour instead of white, so my muffins turned out a little dry/dense--my fault. But I haven't given up on the recipe! Next time I will try adding some applesauce, or increasing the milk/cottage cheese. I love the fact the muffins are low fat/low sugar--perfect for a healthy lifestyle. Thanks for posting.
