“This is an easy and delicious coffee cake to make. It could also be a dessert it you served with warm cream. I use half milk/soymilk and half orang juice in the recipe because I think the OJ adds another flavor but you can use all milk/soymilk in thye recipe. ENJOY!!!”

Directions

  1. Heat oven to 375 degrees.
  2. Grease and flour a square pan (9x9).
  3. Mix sugar, shortening and egg throroughly.
  4. Stir in soymilk/milk and OJ.
  5. Sift in flour and baking powder, and salt. Mix well.
  6. Fold in blueberries.
  7. In a seperate small bowl. Mix together ingredients for crumb topping.
  8. Pour batter into greased pan.
  9. Top with crumb topping.
  10. Bake 45-60 minutes.
  11. Enjoy!
