ingredients
- 3⁄4 cup sugar
- 1⁄4 cup shortening, softened
- 2 egg whites
- 1⁄4 cup soymilk (or milk)
- 1⁄4 cup orange juice (if none use all milk)
- 2 cups unbleached flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 2 cups blueberries, well drained

crumb topping
- 1⁄2 cup sugar
- 1⁄2 cup unbleached flour
- 1⁄2 - 1 teaspoon cinnamon
- 3 tablespoons melted butter
directions
- Heat oven to 375 degrees.
- Grease and flour a square pan (9x9).
- Mix sugar, shortening and egg throroughly.
- Stir in soymilk/milk and OJ.
- Sift in flour and baking powder, and salt. Mix well.
- Fold in blueberries.
- In a seperate small bowl. Mix together ingredients for crumb topping.
- Pour batter into greased pan.
- Top with crumb topping.
- Bake 45-60 minutes.
- Enjoy!
