  • Preheat oven to 350 F (180C).
  • Combine flour, sugar, baking powder, butter, egg whites, and vanilla. Mix well. Press onto bottom of 10 inch springform pan.
  • Layer blueberries on base.
  • In large bowl combine flour, yogurt, egg, sugar, vanilla, and lemon rind. Mix until smooth.
  • Pour over blueberries.
  • Bake 60-70 minutes or until cake is firm and golden.

  1. The crust was very dense and hard to cut, making it impossible to eat without splattering oneself with blueberry goop, until I got the knives out. It did not want to set up and so took about 20 minutes longer to bake. I keep a thermometer in my oven because I bake alot of bread so the temp was not the problem. We ate 2 pieces and threw the rest away.
     
  2. Tasty...but wasn't a big hit...perhaps too much blueberry (recipe did not state quantity of frozen blueberries;....wasn't a big hit with the Mr. Kids were nice about it, but didn't have seconds...hmm??
