  • 1 (3 ounce) package lime gelatin
  • 1 tablespoon sugar
  • 2 tablespoons lime juice
  • 1 12 cups boiling water
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 pint fresh blueberries (Frozen blueberries can also be used, but be sure they're thawed and well drained first.)

  • In a medium bowl, combine the gelatin, sugar, lime juice and boiling water, stirring until the gelatin and sugar are dissolved.
  • Chill for about 1 hour or until slightly thickened.
  • Beat the gelatin until light-colored and doubled in volume.
  • Beat in the whipped topping, then gently fold in the blueberries.
  • Pour into a 4-to 5-cup gelatin mold.
  • Cover and chill for 3 to 4 hours, or until firm.
  • Dip the mold briefly into warm water, then unmold onto a large serving platter.

  1. "Light and airy" is an accurate description. Very nice after a heavy meal. Even an 'I don't like jello salad' guest was okay with it!
     
  2. I origionally found this recipe on Mr. Foods recipe web site a few years ago. I absolutely "love" this gelatin salad' it's abit tart 'n tangy, yet sweet as well. I enjoy serving this on the 4th of July.

Hi! My husband, four children and I live in NY. I think my love of cooking and eating?is in my blood. My Grandma (who was 100% Norweigan) was a wonderful cook and my mom & sisters are as well. I really enjoy baking the most. If I had some time off I would bake and look for more new recipes to try!
