Blueberry Oat Bars

"While I thought these tasted great, I had trouble convincing others to try them. If you can get past the blue color, they are a wonderful and relatively healthy treat. If you use non-dairy margarine instead of butter, they are dairy-free."

  • Combine the oats, flour, sugar, salt, baking powder and nutmeg.
  • Mix well.
  • Mix in butter until crumbly.
  • In a separate bowl, beat the egg and then mix in orange juice and vanilla.
  • Combine the two mixtures and blend.
  • Drain the blueberries and combine with mix.
  • Put batter in a greased pan.
  • Brush the topc with the melted butter and top with sugar.
  • Bake at 375 for 20-25 minutes or until browned on top.

  1. Mine did not turn blue because I used fresh blueberries. Next time I would add a lot more blueberries or maybe some nuts. The flavor of the orange juice was nice. I used cinnamon instead of nutmeg. Also, I used a gluten-free flour blend, and veganized the recipe by using Earth Balance non-hydrogenated margarine instead of butter and Ener-G egg replacer. Thanks for posting this; we enjoyed it.
     
  2. Delicious. Quite easy so make also, I made a half recipe (as always, to reduce wastage in case of unsuccessful new recipes.) But I still baked them in the same sized pan. Also, I sweetened the filling with 2 teaspoons of honey and 1-1/2 tablespoons of confectioners sugar.
