Blueberry Orange Bread

  • Preheat oven to 350°F
  • Lightly grease the bottom of one 5x9-inch loaf pan.
  • In a large bowl combine the flour, brown sugar, baking powder, salt, butter, egg, orange zest, milk and orange juice. Beat at low speed just until moistened. Then beat at medium speed for 2 minutes.
  • Fold in the blueberries and spread into the prepared pan.
  • Bake at 350F for 60-70 minutes or until done.
  • Cool in pan for 10 minutes then invert onto a wire rack to cool completely before serving.

  1. Made for PAC, Spring 2007 ~ This was one of my first tastes of blueberries for this year, & it WAS very, very nice [All gone, now, though ~ soooo sorry, but you'll just have to make your own]! Don't know if it made any difference [I like to think it did], but I used a heavily-pulped orange juice rather than the no-pulp kind! A very mildly-flavored, great-tasting bread!
