  • 1 (18 1/4 ounce) package blueberry muffin mix
  • 12 cup orange juice
  • 2 egg whites
  • 1 teaspoon grated orange peel

Directions

  1. Preheat oven to 400 degrees. Grease 2 1/2 inch muffin cups or use paper liners.
  2. Empty muffin mix into large bowl. Break up any lumps. Add orange juice, egg whites and orange peel. Stir until moistened, about 50 strokes.
  3. Fill muffin cups half full and bake for 16 - 19 minutes or until toothpick inserted into muffin comes out clean.
  4. Cool in pan for 5 minutes. Carefully loosen muffins from pan. Remove to wire rack for cooling.
