  • Heat 2 Tbsp of vegetable oil in large frying pan.
  • Stir in chopped garlic, cumin and onions.
  • Cook for 5 minutes over medium heat.
  • Stir in kidney beans and diced tomatoes.
  • Cook over medium heat for 5 to 10 minutes, stirring occasionally.
  • Season to taste with salt and pepper.
  • Stir in chopped cilantro.
  • Keep warm.
  • Brush chicken breasts with remaining 2 Tbsp oil, sprinkle with curry powder, salt and pepper.
  • Grill under broiler, turning occasionally, until no longer pink inside (about 20 minutes).
  • Slice chicken breasts and serve over rice, topped with kidney bean-tomato mixture.
  • Add dollop of sour cream on each serving.
  • Garnish with cilantro sprigs.

  2. The kidney bean tomato mix really made it. Was delicious. Thankyou for the recipe. Used a chicken leg instead of breast, jasmine rice, natural greek yoghurt and reduced the ingredients for one. Will definitely have again.
     
  3. After a few tweaks, this was really good. I halved the recipe, with the exception of the curry powder and the garlic. I also flattened out the chicken breasts so they'd cook more evenly and served the whole concoction over basmati rice, with steamed broccoli on the side. The result was incredible! Even my girlfriend, a self-proclaimed hater of beans, loved it and wants me to make it again. Thanks, Gingerbear!

Me and my boyfriend have been together for 11 years now. We live on 40 acres and have 6 dogs and 4 Tennessee Walkers. We both work a lot of hours so there is never enough time in a day to get everything done. I absolutely love the outdoors. I also enjoy lifting weights, reading and playing with all of my beautiful animals. I absolutely love, love and love to cook. I like to cook a variety of things and also like love to bake. I like to just get in the kitchen and experiment with different things. If something does not turn out for me such as pie crust or gravy I will keep trying until I can make it work. Only problem is, when I finally make it work it may not work again the time after that. It is fun though and I do consider myself a pretty good cook for the most part. I also love slow cooker recipes. Those are my most favorite in the winter months.
