- 2 eggs, separated
- 1⁄2 cup firmly packed light brown sugar
- 1 tablespoon flour
- 1⁄2 teaspoon cinnamon
- 1⁄8 teaspoon salt
- 1⁄4 cup melted butter
- 1⁄2 teaspoon vanilla
- 1 cup dark corn syrup
- 1 cup coarsely chopped walnuts
- 1 unbaked 9-inch pie shell
directions
- Preheat oven to 350*F.
- Beat egg yolks with rotary beater until light and lemon colored. Add brown sugar, flour, cinnamon, salt, butter, vanilla and syrup and blend well.
- Beat egg whites in another bowl until stiff but not dry. Fold 1/3 into yolk mixture to loosen, then fold in remainder along with 3/4 cup walnuts.
- Turn into unbaked pie shell. Sprinkle with remaining nuts.
- Bake until knife inserted in center comes out clean, about 50 minutes.
- Serve warm or cold with whipped cream or ice cream.
