Bon Appetit's Walnut Pie

  • Preheat oven to 350*F.
  • Beat egg yolks with rotary beater until light and lemon colored. Add brown sugar, flour, cinnamon, salt, butter, vanilla and syrup and blend well.
  • Beat egg whites in another bowl until stiff but not dry. Fold 1/3 into yolk mixture to loosen, then fold in remainder along with 3/4 cup walnuts.
  • Turn into unbaked pie shell. Sprinkle with remaining nuts.
  • Bake until knife inserted in center comes out clean, about 50 minutes.
  • Serve warm or cold with whipped cream or ice cream.
