  • Combine oats, flour, sugar, baking soda, baking powder and salt in large bowl.
  • Blend in buttermilk, eggs, melted butter and vanilla and mix well. Let batter stand 30-45 minutes. Batter will thicken; do not blend in additional liquid.
  • Heat griddle or large skillet over medium heat; butter griddle. Add batter by spoonfuls and cook, turning once, until pancakes are puffed and browned on both sides.
  • Serve immediately with syrup or fruit.

I am now semi-retired and an Empty Nester. I try to focus on lighter dishes for day to day menus. I still like to explore new food ideas. I look for smaller quantity dishes now.
