  1. Combine oats, flour, sugar, baking soda, baking powder and salt in large bowl.
  2. Blend in buttermilk, eggs, melted butter and vanilla and mix well. Let batter stand 30-45 minutes. Batter will thicken; do not blend in additional liquid.
  3. Keat griddle or large skillet over medium heat; butter griddle. Add batter by spoonfuls and cook, turning once, until pancakes are puffed and browned on both sides.
  4. Serve immediately with syrup or fruit.
