"My Mom found this recipe in a Benson and Hedges cookbook, around 20 years ago. It's a little work but, believe me, it's worth it. I always requested her to make this dish on my birthday."

directions

  • Dip chicken in flour; brown in butter.
  • Arrange in a butter 13x9x2-inch baking dish.
  • Top each with 1 slice prosciutto ham and 1/2 slice cheese.
  • Cook shallots and garlic until soft; add mushrooms, wine, broth and herbs.
  • Bring to a boil and cook 10 minutes.
  • Stir into hot mixture 1 T flour and a small amount of sherry.
  • Stir in remaining sherry and cream; season with salt and pepper.
  • Pour sauce over chicken.
  • Bake in a 375° oven for 20 minutes.

  1. FANTASTIC RECIPE. Use this recipe as a company dinner when you want to wow your guests. I followed recipe exactly using half & half for the cream, and baby portobella mushrooms. I did not clarify the butter...was in a hurry. Because my chicken was rather thick, I baked it in a covered casserole for 20 mins., removed the foil, and baked an additional 10 mins. Perfect!!!I think this recipe would be excellent using deli sliced ham instead of the expensive (and salty) prosciutto. Thanks Judy for sharing this wonderful dinner recipe.
     
  2. We had this last night for dinner. It is a five star recipe. It took a little work but very much worth the effort. I made this for two but cut the sauce ingredients in half. Wonderful. Please try this wonderful recipe. I served it with a spinach salad.

  4. Chicken Saltimbocca is awesome. But Chicken Saltimbocca with a creamy mushroom sauce? Even better! I added 1/2 teaspoon salt and 1/4 teaspoon pepper to the flour before dredging the chicken. I also used mozzarella cheese instead of monterey jack. I wasn't sure how to serve this, but I thought pasta would be a good option to soak up some of the delicious sauce. I served the chicken over hot buttered spaghetti and fresh chopped parsley on top. This would also be good served over garlic mashed potatoes. Fantastic dish and great way to impress guests!
     
  5. WOW!!! This is a great recipe. We've been making it for 20 years. It's a great recipe to make for a party. Cut the chicken halves in half. You can even get everything ready the day before. Bake it the day of the party and put in chafing dishes. Most people really enjoy it. YUMMY!

  1. I added 1/2 teaspoon salt and 1/4 teaspoon pepper to the flour before dredging the chicken. I also used mozzarella cheese instead of monterey jack.
     
  2. We love this recipe. I've made it several times. The last time I made it I substituted Havarti cheese for jack cheese YUM! I generally serve it over angel hair pasta. I've served it with broccoli, cesar salad, and various other side dishes. I generally don't bother to clarify the butter I'm lazy it still comes out just fine.
     
  3. WOWO! Amazing! Tender and unbelieveably flavorful. I will be using this as my "amaze the guests" recipe from now on. We used provolone cheese instead of monterey, and cream sherry instead of dry sherry since it's what we had on hand. The proscuitto lends the chicken a wonderful flavor; we couldn't imagine using anything else. It was easy to make with 2 people and the ingredients pre-measured and sliced ahead of time. We used Swanson's organic chicken broth with reduced sodium and it had the perfect amount of salt to it. Also didn't clarify the butter either, but we did use "european style" butter if that makes any difference. Loved it. It was perfect, beyond my expectations.
     
  4. Excellent..My family loved it. I also did not clarify the butter.Deli ham worked great too . I think next time instead of Monterey Jack cheese, I will use Mozzerella or Provolone cheese. That would seem to fit the taste better. I served it over a bed of penne pasta. This is a definate keeper.
