Directions

  1. Bring peas, garlic and 1/2 cup water to a boil in a small pot.
  2. Remove from heat and puree with a hand held blender until creamy, but still studded with pieces of peas.
  3. Transfer to a bowl and stir in the sour cream, lemon zest, tarragon and lemon juice.
  4. Add salt and pepper to taste.
